Simon Boyle

Chef Founder

Simon Boyle is the vision behind the Beyond Food Foundation and Brigade Bar & Bistro. Having started as an apprentice aged 16 at The Savoy, Simon has lead a highly respectable career ever since, working for Anton Mosimann, Saudi Princes, taking Head Chef roles on 5 star Cruise Ships and becoming the first ever Culinary Ambassador for global giant Unilever as well as running his own Private Catering and Events business. Since 2004, Simon has worked tirelessly to help homeless people across London to rebuild their lives, using food as a catalyst, imparting his passion, skills and knowledge of cooking and food onto them and encouraging them to move their lives forward.

When not at work, Simon can be found listening to 1980s prog-rock.

Jan Seymour

Support and Progression Manager

Jan is the support and progression manager for BFF and has been with us since 2006. Jan joined BFF because she loves working with people. A big part of her day-to-day role in working with the apprentices is helping them sort out benefits, housing issues and work placements which in turn will also help them regain their confidence and feelings self-worth. Jan believes that the transition from long-term unemployment back into full time sustainable employment is not just about the skills, but that it’s just as much about mind-set and overcoming personal issues and psychological barriers. Jan believes that understanding and dealing with these can make a massive difference to people's lives.

When Jan’s not at work she loves spending time with her family, especially her 4 lovely granddaughters that Jan says she is blessed to have.

Leon Seraphin

Chef Trainer

Leon joined Beyond Food in June 2013. Leon loves BFF’s mission and purpose and says “it is a wonderful Charity which transforms people’s lives”. Leon started as an apprentice himself, back in 2004, before progressing his career becoming a Head Chef in a professional kitchen. Leon is responsible for all aspects of training the apprentices and delivering our 6-week Freshlife programme. Leon thoroughly enjoys his job and the challenges that come with working alongside the apprentices. He is really passionate about training people to cook and giving them valuable life skills along the way.

In his spare time Leon enjoys spending time with his children and cooking for friends and family. He also enjoys watching cookery programmes and likes to stay up-to-date with current affairs going on in the world.


Poppy Trewhella

Development Manager

Poppy's role is to develop diverse income streams to ensure Beyond Food's training programmes are sustainably funded. This includes running corporate challenges, hosting exclusive events (such as our Michelin Star supper clubs) and securing grant funding. Poppy also leads on our social impact measurement and PR.

Previoulsy, Poppy's worked in dementia healthcare and within the education sector.


Kirsten Couldwell

Programme Coordinator

Kirsten first joined the Beyond Food team in Summer 2015 on secondment where she developed and implemented a Front of House training scheme which runs alongside the existing programmes. She now looks after all the Beyond Food programmes as Programme Coordinator.

Outside of work Kirsten enjoys playing the oboe, sewing, baking and indulging in other craft activities.
